Ingredients:
2 1/2 cupCake flour
2 Eggs
1/4 cupButtermilk
1 tspVanilla
1 tspBaking soda
1/2 tspBaking powder
3/4 cupButter or shortening
1 1/4 cupBananas, ripe *
1 1/2 cupSugar
Procedures:
1* force bananas through potato ricer before measuring.
2Grease two 9" cakes pans, then dust lightly with flour.
3Sift flour once, then measure and sift again with soda and baking powder.
4Cream butter, add sugar and cream together until light and fluffy.
5Add the whole eggs, beating well after each addition of each.
6Add buttermilk and vanilla to bananas.
7Add, alternately, the flour and banana mixture to butter mixture, beginning and ending with the dry ingredients.
8Beat until smooth and well blended.
9Do not overmix.
10Divide, evenly, into cake pans.
11Bake in preheated 375 degree oven for 25 to 30 minutes.
