Ingredients:
2 tbspOil, olive
2 Garlic cloves, minced
2 cupChicken stock
2 cupOnion, chopped
1 lbsPeppers, red bell
1 tspSzechuan chili sauce
Procedures:
1Heat the olive oil in a large saucepan over high heat.
2Add the onions, garlic, and bell peppers then saute for 10 minutes.
3Add the chicken stock and chili sauce.
4Bring to a boil before reducing heat to simmer, covered, until vegetables are very soft.
5Let cool then puree in a processor or blender.
6Makes about 3 ?cups.
7May be stored for brief periods if refrigerated.
8Substitute reduced amount of hot pepper sauce for szechuan chili sauce.
9Serve with stir-fried or steamed chicken, fish.
