Apricot cream filling

Ingredients:
1/3 cupSherry
2 tbspFlour
2/3 cupApricot jam, strained
1/2 tspLemon rind, grated
3 tbspLemon juice
3 tbspOrange juice
3 Egg yolks
Procedures:
1Add sherry to flour.
2Mix until smooth.
3Add apricot jam, lemon rind and juice, and orange juice.
4Stir until smooth.
5Place in a heavy saucepan.
6Cook over low heat, stirring constantly until thick.
7Stir a few tablespoons of hot sauce into egg yolks.
8Then pour egg yolks into remaining hot mixture, continuing to stir.
9Cook and stir a few more minutes, being careful not to boil, until cream is smooth and thick.
