Apple cupcakes with cream cheese frosting

Ingredients:
CUPCAKES
1 cupGranny Smith Apples, peeled
-and grated
1 tbspCognac, or Brandy
1 1/4 cupUnbleached All-Purpose Flour
3/4 cupSugar
1 tspBaking Soda
1/2 tspSalt
1 tspGround Cinnamon
1/8 tspGround Nutmeg
1/4 tspGround Cloves
2 largeEggs
1/2 cupCanola Oil, or Corn Oil
1 tspVanilla Extract
CREAM CHEESE FROSTING
4 tbspUnsalted Butter, soft
3 ozCream Cheese, softened
1 tspVanilla Extract
1 1/2 cupPowdered Sugar
Procedures:
1Position rack in middle of oven.
2Preheat oven to 350°F.
3Line 12 medium muffin tins with paper cupcake liners.
4Put grated apple in a small bowl and stir in brandy.
5Put flour, sugar, baking soda, salt, cinnamon, nutmeg and cloves in a large bowl of an electric mixer.
6Mix on low speed just to combine ingredients.
7Mix in eggs, oil, 1 ts vanilla, and apple mixture.
8Divide batter among 12 muffin tins, about 3 tb batter each.
9Bake until toothpick inserted in center of cupcake comes out clean, about 23-25 minutes.
10Reverse baking sheets after 12 minutes, front to back, to ensure cupcakes bake evenly.
11Cool cupcakes for 5 minutes in pan.
12Transfer cupcakes in their paper liners to wire rack to cool completely.
13Put butter, cream cheese, and 1 ts vanilla in large bowl of an electric mixer and beat on medium-low speed for about 1 minute until mixture is smooth and butter and cream cheese are thoroughly combined.
14Decrease speed to low and add powdered sugar in 2 additions.
15Beat until powdered sugar is incorporated and frosting is smooth.
16Spread cream cheese frosting over top of each cupcake.
