Ingredients:
1 cupCorn meal
3/4 cupRice flour
4 tspBaking powder
1/2 tspSalt
2 tbspSugar
2 Eggs, separated
2 tbspCanola oil
1 3/4 cupApplesauce (14 oz can)
6 Bacon strips, cooked, crumbled
Procedures:
1Breakfast idea without gluten or dairy.
2Serve warm with maple syrup or as a quickbread with soup or salad.
3In a large mixing bowl combine cornmeal, rice flour, baking powder, salt and sugar.
4Beat egg whites until stiff.
5To the dry ingredients, add egg yolks, oil, applesauce and bacon.
6Stir well.
7Fold in egg whites.
8Pour batter into greased 8x8 inch baking pan (or prepared muffin pan).
9Bake in 425°F oven for 45 min or until an inserted knife comes out clean.
10Serves 4-
