Ingredients:
4 ozAngel hair
1/4 cupOlive oil
1 smallOnion, diced
2 clGarlic, minced
2 tbspGinger, minced
1 eachChile pepper, seeded &

2 cupPumpkin, diced
1 cupStock
1 cupCoconut milk
1 tspCoriander
1 tspCumin
1/2 tspThyme
1/2 tspWhite pepper
1/2 tspNutmeg
1/2 tspAllspice
1/2 tspSalt
1 eachBell pepper, chopped
4 eachMushrooms, chopped
1/2 eachZucchini, chopped
1/4 cupCorn, kernels
4 eachBroccoli, blanched
Procedures:
1Cook pasta, set aside.
2Heat the oil over medium heat, add onion, garlic, ginger, and chile pepper and saute 4-5 mins.
3Add pumpkin and water to pan and cook 15-20 mins, until pumpkin is tender.
4Add coconut milk, coriander, cumin, thyme, white pepper, nutmeg, allspice, and salt and simmer anoterh 4-5 mins.
5Place in food processor and process until smooth.
6Heat remaining oil and pepper, mushrooms, and zucchini.
7Saute 5 mins.
8Add corn and broccoli and saute 2 mins.
9Pour pumpkin sauce into skillet and stir.
10Bring to a simmer.
11Cook 1 minute; add pasta.
12Serve steaming.
