Ingredients:
1 3/4 cupAll-purpose flour
1/4 cupWhole wheat flour
2 tspBaking powder
1 1/2 tspBaking soda
1 tspSalt
2 tspCinnamon
2 cupSugar
1 1/2 cupVegetable oil
8 ozPineapple, crushed, drained
2 cupCarrot pieces
1/2 cupWalnuts
3 1/2 ozCoconut, flaked
4 Eggs
1/2 cupApricot jam
3/4 cupWalnuts
Procedures:
1Preheat oven to 350 degrees.
2Grease and flour three 9" round baking pans.
3Mix together flour, baking powder, cinnamon, sugar, baking soda and salt in large mixing bowl.
4Set aside.
5Assemble electric blender.
6Put ?cup walnuts in blender container.
7Cover and process two cycles at grind.
8Add to dry ingredients.
9Put oil, pineapple and carrot pieces into blender container.
10Cover and process five cycles at grind until carrots are finely chopped.
11Pour into bowl with dry ingredients.
12Add eggs and coconut mix with electric mixer at medium low speed until ingredients are moistened.
13Increase speed to medium and continue to mix one minute.
14Pour into prepared pans.
15Bake 30 to 35 minutes or until toothpick inserted in center comes out clean.
16Cool for 10 minutes, remove from pan and cool on wire rack.
17When cool, frost top of each layer with cream cheese frosting.
18Place layers on top of one another.
19Assemble blender.
20Add ?cup walnuts to blender container.
21Cover and process 2 cycles at grind.
22Set aside.
23Heat apricot jam in small saucepan over medium heat until melted.
24Brush sides of cake with melted jam.
25Sprinkle sides with choppedwalnuts.
