Ingredients:
1/4 cupDry sherry
1 tbspOlive oil
2 cupChopped onion
1/2 cupChopped celery
1/2 cupChopped carrots
1/2 cupSeeded and chopped red
-bell pepper
4 cupCooked black beans
2 cupVegetable stock or water
2 tbspMinced fresh garlic
1 cupChopped Italian plum
-tomatoes
2 tspGround cumin
4 tspChili powder
1/2 tspDried oregano
1/4 cupChopped fresh cilantro
2 tbspHoney
2 tbspLow sodium tomato paste
Procedures:
1In large heavy pot, over medium heat, combine sherry and oil and heat to simmering.
2Add onions and saute 8 to 10 minutes.
3Add celery, carrots and bell pepper and saute 5 minutes more, stirring frequently.
4Add remaining ingredients and bring to a boil.
5Lower heat and simmer, covered, for 45 minutes to 1 hour.
6Mixture should be thick, with all water absorbed.
7Serves 6-Serving suggestion: this chili is tasty with a garnish of crushed low salt tortilla chips, grated monterey jack cheese, plain non-fat yogurt, or minced fresh cilantro.
