Ingredients:

| cup | Rolled oats | | 1
| tbsp | Plus ?ts cinnamon | | 3/4
| cup | Apple juice | | 2
| large | Apples, peeled/sliced | | 1
| tsp | Lemon juice, room temp | | 1/3
| cup | Water, cold | | 1
| pack | Unflavored gelatin | | 2
| cup | Fat-free yogurt | | 1/4
| cup | Honey | | 1/2
| tsp | Almond extract |

Procedures:
| 1 | Preheat oven at 350. | | 2 | Prepare a pie plate with cooking spray. | | 3 | In a small bowl, combine oats and 1 tablespoon cinnamon. | | 4 | Toss with ?cup apple juice. | | 5 | Press onto bottom of pie plate. | | 6 | Bake 5 minutes or until set. | | 7 | Cool. | | 8 | In a mixing bowl, toss apple slices with lemon juice; arrange on cooled crust in pan and set aside. | | 9 | In a small saucepan, combine water and remaining ?cup apple juice. | | 10 | Sprinkle gelatin over water mixture; let stand 3 minutes to soften. | | 11 | Cook and stir over medium heat until gelatin is completely dissolved; remove from heat. | | 12 | Add yogurt, honey, remaining ?teaspoon cinnamon and almond extract; blend well. | | 13 | Pour over apples in crust. | | 14 | Chill several hours or overnight. |
