Ingredients:
1 cupMinced onion
1 tspSafflower oil
1/2 cupDefatted Chicken Stock
1 tbspMinced garlic
4 cupDiced turkey meat --
Skinned
1/2 cupDiced celery
1/2 cupChopped carrot
1/4 cupMinced parsley
1 cupWater
1 cupDiced tomatoes
1/2 tspGround cloves
2 tbspChili powder -- or to taste
1/2 tspTabasco Sauce
4 ozCanned green chiles --
Chopped
Herbal salt substitute and
Pepper -- to taste
12 Flour tortillas
1/2 cupGrated lowfat Cheddar
Cheese
Procedures:
1In a dutch oven over medium-high heat, saute onion in oil and stock until soft.
2Add garlic, turkey, celery, carrot, parsley, and tomatoes and saute, stirring frequently, for 10 minutes.
3Add the water, cloves, chili powder, tabasco, and green chiles.
4Lower heat, cover, and cook for 25 minutes.
5Taste for seasoning and add salt substitute and pepper, if necessary.
6Warm tortillas by placing in a toaster oven or conventional oven for 5 minutes at 200 °F.
7To serve, spoon approximately 1/3 cup chili into each tortilla, cover with grated cheese, and roll
