Ingredients:
1 3/4 lbsChili Grind Meat
3 sliceBacon
1 tbspCumin seed, roasted and
-ground
1 tbspNew mexican chili powder
-plain
1 tbspAncho chili powder, plain
1 tbspCalifornia chili powder
-plain
1 tspMexican oregano, crushed
1/4 tspThyme
1/4 tspAllspice
1/4 tspDried cilantro
1 largeOnion (chopped fine)
2 Stalks celery (chopped
-fine)
1 canEl Paso green chiles (mild)
3 Jalapeno chilies, seeded
-chopped fine
1 Habanero chili, seeded
-chopped fine
1 largeClove garlic
2 15 oz cn stewed tomatoes
-(pureed in a blender)
1 12 oz can beer
1 tspBeef base
3 tspPaprika, sweet
1 tspCoriander powder
1/4 tspCayenne pepper
1 Shot Jim Beam Bourbon
-whisky
2 tbspOlive oil
-Masa Harisa (Corn Flour for
-Thickening)
Procedures:
1Cook bacon and reserve grease for sauting onions and garlic.
2In a large chili pot, saute onion and garlic.
3Remove onions and garlic and set aside.
4Add olive oil and cook meat until grey in color, but not browned.
5Add onion and garlic back to chili pot.
6add dry spices and cook while stirring for 3 or 4 minutes.
7Add stewed tomatoes, bacon bits, chiles, beer, celery, whiskey, beef base.
8Bring to a boil and then simmer until done.
