Procedures:
| 1 | Cook bacon and reserve grease for sauting onions and garlic. | | 2 | In a large chili pot, saute onion and garlic. | | 3 | Remove onions and garlic and set aside. | | 4 | Add olive oil and cook meat until grey in color, but not browned. | | 5 | Add onion and garlic back to chili pot. | | 6 | add dry spices and cook while stirring for 3 or 4 minutes. | | 7 | Add stewed tomatoes, bacon bits, chiles, beer, celery, whiskey, beef base. | | 8 | Bring to a boil and then simmer until done. | | 9 | 3 to 4 hours |
