Ingredients:
6 lbsVery Lean, Coarse grnd chuck
6 Cloves garlic, crushed
16 ozTomato sauce
6 tbspChili Powder, (dark ANCHO)
1/4 tspHabanero Sauce, OPTIONAL

1 1/2 tspSalt
1 tspWhite Pepper
1 1/2 tspOregano

1 tbspGarlic powder
2 Onions, large, minced
6 Fresh jalapenos, stemmed
1 quartBeef Broth
4 tbspCumin, ground
6 tbspLight Chili Powder (N.M.

2 tbspPaprika
1 tspCayenne Pepper
1 tbspMonosodium glutamate

Procedures:
1Brown meat in skillet, drain and put in large, (7 quart) pot.
2Add onions, garlic, jalepenos (stemmed and pierced), 1 can tomato sauce, beef broth, dark chili powder, 2 tablespoons cumin and habanero sauce if desired.
3Bring to a low boil, cover and cook 45 minutes, adding a little water as necessary.
4add light chili powder, 1 can tomato sauce, 2 tablespoons cumin and remaining ingredients.
5Simmer covered 45 miutes.
6Adjust salt to taste and serve with cold beer
