Avocado soup with green peppercorns

Ingredients:
1 medOnion, diced
1 tbspGround coriander
1 tbspOlive oil
4 largeRipe avacados, peeled
-pitted and coaresly chopped
1/3 cupGreen peppercorns in brine
-drained
Salt to taste
Pepper to taste
2 Garlic cloves, minced
1 tbspCumin
2 1/2 quartLight chicken stock
Cilantro leaves for garnish
Procedures:
1In large saucepan, cook the onion, garlic and spices in the olive oil over moderate heat for 10 minutes, stirring often.
2Add avacados and stock, bring to a boil, then reduce heat to medium.
3Cook 20 minutes.
4Cool to room temperature.
5Puree soup in blender until smooth.
6Return to pan, bring to a boil, add peppercorns, reduce to moderate heat and cook 10 minutes.
7Serve garnished with cilantro and peppercorns.
