Ingredients:
4 tbspGebhardt chili powder
4 tbspCalifornia chile powder
3 tbspMild New Mexico chile powder
2 tbspHOT New Mexico chile powder
1 tbspPasilla chile powder
1 can(14 ?oz.) chicken broth
4 cupWater
1 Pod garlic, pressed
-Salt to taste
3 tbspGround cumin
2 tbspFlour
1 tbspGarlic powder
1 tspGround Mexican oregano
1 can(14 ?oz.) Hunt's
-Whole Tomatoes
2 medOnions, finely chopped
-Tabasco Sauce
Procedures:
14 pounds tri-tip or bottom sirloin, trimmed and cut in ?inch cubes.
21) combine all dry ingredients in a small container.
3Clean tomatoes of seeds and put through sieve or chop finely.
4Combine tomatoes, broth water and dry spices in a bowl, mix well.
5Put into a chilli pot and simmer.
62) meanwhile, in a skillet, saute onions and garlic in a little water over low heat for 30 minutes.
7Drain and add to tomato sauce and simmer 30 minutes.
83) in a large skillet, cook meat until no longer pink, drain off juices and add to chilli pot.
9Simmer for 1 ?hours or until meat is tender.
10Adjust seasoning with salt and add tabasco if hotter chilli is desired.
11cooking time - 3 hours or longer (start to finish)
