Ingredients:
16 Apples, cored and chopped
5 cupWater
1/2 tbspLemon peel, grated
1 Inch cinnamon, wrapped in
Cheese cloth
1/4 cupMaple syrup
1 tbspArrowroot
1 tbspLemon juice
1/4 cupWhite wine
1/2 cupSour cream
Procedures:
1Simmer apples, water, lemon peel, cinnamon, and maple syrup until apples are tender, about 20 minutes; remove cinnamon.
2Puree soup in blender; return to sauce pan.
3Remove about a cup of liquid and combine it with arrowroot.
4When thickened, return to soup.
5Stir in lemon juice, and wine.
6Heat through.
7Serve with a spoonful of sour cream on each bowl.
