Anasazi bean soup

Ingredients:
1 cupAnasazi beans, dry, picked
-over and rinsed
Vegetable stock or water
1 medOnion, chopped
2 largeGarlic cloves, pressed or
-minced
1/4 tspCoriander
1/2 tspCumin
1 Jalapeno or other pepper
-finelychopped
Salt to taste
Green onions, minced, and/or
-cilantro leaves for garnish
Procedures:
1Cover the beans in water and soak overnight, allowing extra water for expansion.
2Drain, reserving soaking water.
3Measure soaking water and add stock or water to equal 6 cups.
4Pour into pot.
5Add remaining ingredients except salt and bring to a boil.
6Cover, reduce heat andcook at a low simmer for 1 ?to 2 hours, or until beans are tender.
7Season with salt to taste and serve hot, garnished with green onion and/or cilantro.
8Makes 4 servings.
