Ingredients:
3 lbsBoneless pork center rib, cu
1/3 cupOil, (4-5 t.) (i use oliv
3 Onions, sliced
1 Garlic clove, crushed or min
1/3 cupFlour, (4-5 t.)
1 3/4 cupChicken stock, (i use a good
1 3/4 cupApple cider, (?pt)
3 Apples
3/4 tbspDry basil, (i use 1 t.)
3/4 tbspDry majoram, (i use 1 t.)
Salt and pepper, to taste
1/3 cupHeavy cream, (4-5 t.)
Chopped parsley, for garnish
Procedures:
1Move to a casserole dish.
2Add onion, garlic to oil in pan and saute until beginning to brown.
3Sprinkle in flour, and saute gently until be- ginning to brown.
4Gradually blend in stock and cider and bring to boil, stirring as it thickens.
5Add herbs and seasoning.
6Pour over the pork.
7Cover and refigerate (if nec).
8Until ready to cook.
9Place in a 350f/180c oven.
10Cook for 1 hour.
11Meanwhile, peel, core and slice apples, reserving some for garnish, if desired.
12Add apples to casserole, and bake for 45 more minutes, until meat is tender.
13Stir cream in before serving.
14Garnish if desired.
