Ingredients:
3 lbsBeef chuck, coarse grind
2 lbsBeef chuck, fine grind
2 Onions
5 Garlic cloves
1 tbspRed chile, hot, ground
5 tbspRed chile, mild, ground
3 tbspCumin
3 tspSalt
3 cupWater
30 ozTomato sauce
56 ozTomatoes, whole
32 ozPinto beans
Procedures:
1Add the meat, onions, and garlic to a heavy 5-quart pot or dutch oven.
2Break up any lumps with a fork and cook over medium heat, stirring occasionally, until the meat is evenly browned.~ Stir in the ground chile, cumin, and salt, thoroughly blending the mixture.
3Add the water, tomato sauce, and tomatoes, mashing them with a fork.~ Bring the mixture to a boil, then lower the heat and simmer, uncovered, for about 1 ?hours.
4Stir occasionally.~ Taste and adjust seasonings.
5Stir in the beans and simmer, uncovered, ?hour longer.~
