Ingredients:
1 1/2 lbsPork riblets or pork ribs
-country style, cut to pieces
5 cupWater
4 medTomatoes, sliced
1 medOnion, sliced
1 1/2 tspSalt
1 medIcicle radish, cut into
-1" pieces
-(or 10 red radishes
1/4 lbsGreen beans
1/2 lbsSpinach (or cabbage
-mustard greens or
-watercress)
5 medSampaloc (tamarind)
-[available as powde
Procedures:
1In a large pot, bring water and pork to a boil.
2Add tomatoes, oni salt and tamarind.
3Simmer 1 hour or until pork is tender.
4Optional: remove tamarind and mash with some broth.
5Strain juice into pot.
6Taste for seasoning.
7Bring to a boil.
8Add green beans and radish 10 minutes.
9Add spinach, cover and remove from heat.
10Let stand 5 minute to fi cooking spinach.
11Variations: beef (stewing, brisket, shank or plate) may be used in pl of pork.
12Adjust cooking time for each.
