Schnitzel (pork cutlets - fried)

Ingredients:
1 lbsPORK CUTLETS
1/2 cupFLOUR
2 eachEGGS, BEATEN
1 1/4 cupDRY BREAD CRUMBS
1 dashSALT
1 dashPEPPER
1 eachOIL FOR FRYING
Procedures:
1Pound cutlets as thin as posible.
2Sprinkle with salt and pepper.
3Set up an assembly line with flour on one plate, eggs on another and crumbs on a third.
4Coat each cutlet with flour, then egg, then bread crumbs.
5Heat ? of oil in a large skillet over medium heat.
6Add as many cutlets as will fit without crowding.
7Cook until golden brown on each side, about 1 ?minutes.
8Drain cutlets on paper toweling.
9Per serving / 431 calories, 32 g protien, 17 g fat, 324 mg sodium, 35 g carb, 185 mg chol.
10Variations: schnitzel a la holstien - top each schnitzel with a fried egg.
11Paprika schnitzel - saute an onion and slice 2 bell peppers and top schnitzel.
12/ rahm schnitzel - pour all the fat out of the pan.
13Add ?cup pour cream and heat gently, scraping up brown bits from bottom of pan.
14Pour over schnitzels.
