Sausage stuffed potatoes

Ingredients:
4 eachMEDIUM BAKING POTATOES
1/2 lbsBULK PORK SAUSAGE
1 eachSMALL RED PEPPER, CHOPPED
2 eachRIBS OF CELERY, SLICED THIN
1 eachMEDIUM ONION, CHOPPED SMALL
6 eachEGGS, BEATEN
2 tbspBUTTER
1 eachSALT AND PEPPER TO TASTE
Procedures:
1Scrub potatoes.
2Pierce several times with a fork.
3On paper towels, arrange potatoes in the microwave oven.
4Cook on high for 16 minutes or until potatoes are just fork tender.
5Rearrange one time while cooking.
6Meanwhile, into a medium skillet, crumble the sausage and cook over medium heat with pepper, celery and onion, until sausage is no longer pink and vegetables are tender.
7Stir in eggs.
8Cook over low heat, stirring frequently until eggs are set.
9To serve, cut each potato in half.
10Fluff with fork.
11Season with butter and salt and pepper.
12Top with cooked egg mixture.
