| each | MEDIUM BAKING POTATOES | | 1/2
| lbs | BULK PORK SAUSAGE | | 1
| each | SMALL RED PEPPER, CHOPPED | | 2
| each | RIBS OF CELERY, SLICED THIN | | 1
| each | MEDIUM ONION, CHOPPED SMALL | | 6
| each | EGGS, BEATEN | | 2
| tbsp | BUTTER | | 1
| each | SALT AND PEPPER TO TASTE |

Procedures:
| 1 | Scrub potatoes. | | 2 | Pierce several times with a fork. | | 3 | On paper towels, arrange potatoes in the microwave oven. | | 4 | Cook on high for 16 minutes or until potatoes are just fork tender. | | 5 | Rearrange one time while cooking. | | 6 | Meanwhile, into a medium skillet, crumble the sausage and cook over medium heat with pepper, celery and onion, until sausage is no longer pink and vegetables are tender. | | 7 | Stir in eggs. | | 8 | Cook over low heat, stirring frequently until eggs are set. | | 9 | To serve, cut each potato in half. | | 10 | Fluff with fork. | | 11 | Season with butter and salt and pepper. | | 12 | Top with cooked egg mixture. |
