Ingredients:

| lbs | Beef liver | | 1
| lbs | Tripe | | 2
| quart | Water | | 1/2
| lbs | Raw shrimp, shelled | | | -deveined, and diced. | | 2
| tsp | Salt | | 1/2
| tsp | Dried ground chili peppers | | 2
| tbsp | Cornstarch | | 1
| tbsp | Vinegar | | 1
| tsp | Sugar | | 2
| tsp | Ginger root, minced | | | 3 ea Onions cut in eighths | | | -lengthwise | | | 3 ea Minced garlic cloves |

Procedures:
| 1 | Cut the pork in ?inch cubes. | | 2 | Cut the liver and tripe into julienne strips. | | 3 | Bring the water to a boil and cook the pork, liver and tripe in it for 30 minutes. | | 4 | Add the shrimp and cook 5 minutes. | | 5 | Mix together the salt, chili peppers, cornstarch, vinegar, sugar, and ginger with enough water to make a thin paste. | | 6 | Stir into the mixture, stirring steadily to the boiling point. | | 7 | Add the onions and garlic. | | 8 | Cook 10 minutes longer or until tripe is tender. | | 9 | Serves 8-10 pork and tripe stew samlor chapheck viet nam |
