Salt and pepper pork

Ingredients:
2 lbsPork shoulder, cut into 1"
- cubes
2 tbspLight soy sauce
2 tbspDry sherry
2 tbspCorn flour
1 pintVegetable oil
4 largeGarlic cloves, chopped
2 tspSea salt, crushed
2 tspFive spice powder
2 tspCrushed black peppercorns
Large pinch mild chilli
- powder
Procedures:
1In a large bowl combine the cubed pork, soy sauce, sherry and cornflour.
2Leave for 20 minutes.
3Pour the oil into a wok or large frying pan.
4When it is quite hot, add the pork.
5Fry for 5-6 minutes or until golden.
6Remove the pork and pour off all but 2 tablespoons of the oil.
7Add the chopped garlic and fry for a few seconds.
8Add the remaining ingredients, fry for a few seconds to warn the spices through, then add the pork.
9Fry, stirring almost continuously, for a couple of minutes.
10Serve while hot and sizzling.
