Ingredients:
2 tbspFlour
1 3/4 tspSalt, divided
1 tspDry mustard
1 tspCaraway seed
1/2 tspSugar
1/4 tspPepper
1/4 tspSage
1 Pork loin roast, 4 to 5 lb
1 1/2 cupApplesauce
1/2 cupPacked brown sugar
1/4 tspGround mace
Procedures:
1Recipe by: sue klapper preparation time: 2:30 in a small bowl, combine flour, 1 - ?teaspoons salt, mustard, caraway, sugar, pepper and sage; rub over roast.
2Cover and let stand for 30 minutes.
3Place on a greased baking rack, fat side up, in a roasting pan.
4Bake, uncovered at 325°F for 1 hour.
5Combine applesauce, brown sugar, mace, and remaining salt.
6Mix well.
7Spread over roast.
8Roast 1 hour longer or until the internal temperature reaches 160 to 170.
9Let stand 15 mintues before slicing.
