| | Pork loin roast, 4 to 5 lb | | 1 1/2
| cup | Applesauce | | 1/2
| cup | Packed brown sugar | | 1/4
| tsp | Ground mace |

Procedures:
| 1 | Recipe by: sue klapper preparation time: 2:30 in a small bowl, combine flour, 1 - ?teaspoons salt, mustard, caraway, sugar, pepper and sage; rub over roast. | | 2 | Cover and let stand for 30 minutes. | | 3 | Place on a greased baking rack, fat side up, in a roasting pan. | | 4 | Bake, uncovered at 325°F for 1 hour. | | 5 | Combine applesauce, brown sugar, mace, and remaining salt. | | 6 | Mix well. | | 7 | Spread over roast. | | 8 | Roast 1 hour longer or until the internal temperature reaches 160 to 170. | | 9 | Let stand 15 mintues before slicing. |
