Ingredients:
1 lbsBoneless Fresh Pork *
1 ea Medium Onion **
2 tbspSoy Sauce (Import. If Avail)
1/2 tspSalt
1/4 tspPepper
1 pack(10 oz) Frozen Peas
8 ozFresh Mushrooms, Sliced
1 tbspCornstarch
2 tbspCold Water
1 ea Jar (2 ozs) Pimiento ***
1 cupSalted Cashews Or Peanuts
Procedures:
1* pork should be fresh shoulder meat cut into ?inch cubes.
2** onion should be sliced and separated into rings.
3*** jar of pimientos, should be 2 ozs and they should be sliced.
4~--------------------------------------------------------------------- ~--- mix pork, onion and soy sauce in 3-qt casserole.
5Cover and microwave on medium (50%) until meat is no longer pink, 12 to 15 minutes.
6Stir every 3 minutes.
7Stir in salt, pepper, peas and mushrooms.
8Cover and microwave on medium (50%) 9 minutes.
9Stir every 3 minutes.
10Blend cornstarch and water; stir into meat mixture.
11Stir in pimiento.
12Cover and microwave on medium (50%) until meat is tender, 9 to 12 minutes, stirring every 3 minutes.
13Stir in cashews.
14Cover and let stand 5 minutes.
15Serve with rice if desired.
