Ingredients:

| lbs | Pork roast | | 2
| cup | Apple, chopped | | 1/2
| cup | Onion, finely chopped | | 1
| small | Garlic clove, minced | | 1
| tbsp | Margarine | | 1
| tbsp | Cornstarch | | 1
| tsp | Chicken bouillon granules | | 1/4
| tsp | Nutmeg | | 1/8
| tsp | White pepper | | 1 1/4
| cup | Apple juice |

Procedures:
| 1 | Trim fat off roast. | | 2 | If desired, sprinkle salt and pepper on roast. | | 3 | Place roast, rib side down, in a shallow baking dish. | | 4 | Insert a thermometer. | | 5 | Roast in a 325 deg f oven for 1 ?to 3 hours or until thermometer reaches 170 deg f for well done. | | 6 | Cover with foil for 15 minutes before carving. | | 7 | For the sauce: in a small saucepan, cook apple, onion and garlic in margarine until tender. | | 8 | Stir in cornstarch, bouillon, nutmeg and pepper. | | 9 | Add apple juice all at once. | | 10 | Cook and stir until bubbly. | | 11 | Cook and stir one minute more. | | 12 | To serve, slice between ribs and pass the sauce. | | 13 | Serves 8 to 10 people. |
