Pork with apple-nutmeg sauce

Ingredients:
4 lbsPork roast
2 cupApple, chopped
1/2 cupOnion, finely chopped
1 smallGarlic clove, minced
1 tbspMargarine
1 tbspCornstarch
1 tspChicken bouillon granules
1/4 tspNutmeg
1/8 tspWhite pepper
1 1/4 cupApple juice
Procedures:
1Trim fat off roast.
2If desired, sprinkle salt and pepper on roast.
3Place roast, rib side down, in a shallow baking dish.
4Insert a thermometer.
5Roast in a 325 deg f oven for 1 ?to 3 hours or until thermometer reaches 170 deg f for well done.
6Cover with foil for 15 minutes before carving.
7For the sauce: in a small saucepan, cook apple, onion and garlic in margarine until tender.
8Stir in cornstarch, bouillon, nutmeg and pepper.
9Add apple juice all at once.
10Cook and stir until bubbly.
11Cook and stir one minute more.
12To serve, slice between ribs and pass the sauce.
13Serves 8 to 10 people.
