Ingredients:
1 lbsBroccoli bunch
2/3 cupOnion, chopped
1/4 cupWater
4 Eggs, slightly beaten
1 1/4 cupMilk
4 To 6 drops Hot Sauce
1/2 tspSalt
1/8 tspGround pepper, fresh
1/8 tspGround nutmeg
1 tbspFresh parsley, minced
2/3 cupSwiss cheese, fresh
1/3 cupParmesan cheese, grated
Procedures:
1Trim off large leaves of broccoli.
2Remove tough ends of lower stalks, and wash broccoli thoroughly; cut flowerets and stems into thin slices.
3Combine broccoli, onion, and ?cup water in a saucepan; cover and cook over medium heat 6 to 8 minutes.
4Drain thoroughly, pressing out moisture with paper towels.
5Combine next 8 ingredients.
6Stir in vegetables, and pour mixture into a greased 10-inch pie plate.
7Sprinkle with parmesan cheese; bake at 350^ about 30 minutes or until set.
8Let stand 10 minutes.
9Yield: one 10-inch pie.
