Ingredients:
1/3 cupOlive oil
5 lbsBeef brisket, cut ? cubes
2 largeOnions, coarsely chopped
6 largeGarlic cloves, fine chop
2 Bell peppers
2 tbspDried Basil
1 Bay leaves
2 tbspGround Red mild chili
1 tbspCayenne pepper
1 tbspChile caribe
2 tbspGround Cumin
2 tbspCorn flour (masa harina)
6 cupCanned tomatoes, chopped
1/2 cupFreshly brewed coffee
Salt
Freshly ground black pepper
Procedures:
1Heat the oil or melt the lard in a large heavy casserole over medium heat.
2Pat the brisket dry and add it to the casserole.
3Stir the beef until it is quite brown on all sides.
4Remove it from the casserole and set aside.
5Add more oil or lard to the casserole if needed, then add the onions and garlic and cook until the onions are translucent.
6Stir in the green peppers, basil, bay leaf, ground chile, cayenne pepper, caribe, and cumin.
7Cook for about 1 minute, then add the corn flour (masa harina) and cook 1 or 2 minutes longer.
8Return the brisket to the casserole and add the tomatoes and their liquid.
9Bring to a boil, then lower the heat and simmer, uncovered, for 2 hours.
10Stir occasionally.
11Stir in the salt and black pepper.
12Taste and adjust seasonings.
13Add the coffee and simmer, uncovered, for 1-?hours longer.
