Working mom's mango chicken

Ingredients:
1 4 pound
1 8 oz bottle
1 packOnion soup mix -- dry
1 tspFresh ginger root -- grated
1 8 oz jar
Apricot
Frying chicken -- cut up
Russian salad dressing
Mango preserves -- or
Procedures:
1Early in the morning before work, wash, dry and cut up chicken.
2Combine all the ingredients in a zip lock bag.
3Refrigerate all day.
4Immediately upon arriving home from work empty the contents of the zip lock bag into a 9" x 13" glass baking dish.
5Scrub a baking potato for each family member; prick with a fork and place on oven rack next to the chicken.
6Bake at 350 °F for 1-?hours.
7Indulge yourself in a bubble bath, toss a light salad and pour a couple of cocktails for you and mr.
