Ingredients:
2 Apples
2/3 cupPacked brown sugar
1/4 cupButter softened
1 Egg
1/4 cupLow fat plain yogurt
1 tspVanilla
1 2/3 cupSifted cake & pastry flour
1 1/2 tspGinger
1 1/2 tspBaking powder
1/2 tspBaking soda
Pinch of salt
2/3 cupBasic applesauce
TOPPING: -
3 tbspPacked brown sugar
2 tspWater
1/2 tspCinnamon
Procedures:
1Peel, core and thinly slice apples, set aside.
2In bowl, beat sugar with butter until crumbly.
3Beat in egg.
4Beat in yogurt and vanilla.
5Combine flour, ginger, baking powder, baking soda and salt; fold into butter mixture alternately with applesauce, making 3 additions of dry and 2 of wet.
6Spoon into lightly greased 9 inch springform pan.
7Arrange apples in overlapping concentric circles on top.
8topping: combine sugar, water and cinnamon; brush over apples.
9Bake in 350f oven for 40 minutes or until cake tester inserted in centrecomes out clean.
10Let cool in pan on rack for 5 minutes.
11Remove side of pan; let cool completely.
12Makes 10 servings.
