Ingredients:
1/4 cupOil
4 lbsTop round steak, trimmed
Into ?inch cubes
6 cupWater
5 6oz cans tomato paste
1/2 cupInstant minced onion
2 1/2 tbspCelery salt
3 tbspChili powder
1/2 tspGround allspice
1/2 tspGround cinnamon
1/2 tspCurry powder
1/2 tspGarlic powder
1/2 tspCoriander seed, ground
1/2 tspCumin seed, ground
1/2 tspGround ginger
1/2 tspMarjoram leaves, crushed
1/2 tspOregano leaves, crushed
1/2 tspPaprika
1/2 tspThyme leaves, crushed
1/2 tspSage leaves, crushed
Pinch red pepper, ground
27 ozCan whole green chiles
Drained, seeded, & chopped
4 ozBar milk chocolate, broken
Procedures:
1Heat 2 t oil in a large saucepan until hot.
2Add 1 lb beef and brown on all sides.
3Remove with a slotted spoon and set aside.
4Repeat until all beef is browned.
5Use additional oil as needed.
6Return all beef to saucepan.
7Add 4 cups of water, tomato paste, onions, celery salt, spices, herbs and green chiles; mix well.
8Boil, then reduce heat to simmer, covered, for 90 minutes, stirring occasionally.
9Add remaining water.
10Mix in chocolate; simmer, covered for 30 minutes, stirring often.
