Ingredients:
12 medCarrots, peeled and sliced
1/4 cupButter
1 smallGreen pepper, grated
1 smallOnion, grated
1/4 cupButter, melted for sauteing
1 1/2 cupMilk
2 tbspFlour
Procedures:
1Boil carrots until cooked, about 20 minutes.
2Drain and mash with ?cup butter.
3Saute pepper and onion in melted butter, about 5 minutes.
4Stir in flour and milk.
5Cook over medium heat for about 3 minutes or until mixture is consistency of gravy.
6Mix with mashed carrots.
7Place in casserole dish.
8Bake at 325 °F for at least 45 minutes.
