Ingredients:
| | Sm Acorn Squash (1 lb) | | 1/4
| cup | Chopped Celery | | 1/4
| tsp | Salt | | 1/4
| tsp | Cinnamon | | | Slice raisin bread, cubed | | 6
| oz | Lean ground Pork or Turkey | | 1/4
| cup | Chopped Onion | | 1/4
| tsp | Curry powder | | 1/2
| cup | Unsweetened Applesauce |

Procedures:
| 1 | Spray a 10x6x2 baking dish with pam. | | 2 | Halve squash; discard seeds. | | 3 | Place squash, cut side down, in baking dish. | | 4 | Bake, uncovered, in 350 deg f oven 50 minutes. | | 5 | Meanwhile, for stuffing, in a skillet cook turkey, celery, and onion till meat is no longer pink and vegetables are tender. | | 6 | Drain off fat. | | 7 | Stir in salt, curry powder, and cinnamon; cook 1 minute more. | | 8 | Stir in applesauce and bread cubes. | | 9 | Turn squash cut side up in dish. | | 10 | Place stuffing in squash halves. | | 11 | Bake uncovered, 20 minutes more. | | 12 | Microwave directions: place squash, cut side down in a 10x6x2" microwave-safe baking dish. | | 13 | Micro-cook on 100% power (high) for 6 ?8 ?minutes or till tender. | | 14 | Set aside. | | 15 | In a 1 qt casserole cook turkey, celery, and onion, covered, on high for 2-3 minutes or till turkey is no longer pink, stirring twice. | | 16 | Drain. | | 17 | Stir in curry powder, salt, and cinnamon. | | 18 | Cook 30 seconds more. | | 19 | Stir in applesauce and bread cubes. | | 20 | Spoon into squash halves. | | 21 | Cook, uncovered, on high for 3-4 minutes or till heated through. | | 22 | ** per serving: 306 calories, 23 g protein, 38 g carbohydrates, 8 g fat, 63 mg cholesterol, 384 mg sodium, 1171 mg potassium |
