Ingredients:
Sm Acorn Squash (1 lb)
1/4 cupChopped Celery
1/4 tspSalt
1/4 tspCinnamon
Slice raisin bread, cubed
6 ozLean ground Pork or Turkey
1/4 cupChopped Onion
1/4 tspCurry powder
1/2 cupUnsweetened Applesauce
Procedures:
1Spray a 10x6x2 baking dish with pam.
2Halve squash; discard seeds.
3Place squash, cut side down, in baking dish.
4Bake, uncovered, in 350 deg f oven 50 minutes.
5Meanwhile, for stuffing, in a skillet cook turkey, celery, and onion till meat is no longer pink and vegetables are tender.
6Drain off fat.
7Stir in salt, curry powder, and cinnamon; cook 1 minute more.
8Stir in applesauce and bread cubes.
9Turn squash cut side up in dish.
10Place stuffing in squash halves.
11Bake uncovered, 20 minutes more.
12Microwave directions: place squash, cut side down in a 10x6x2" microwave-safe baking dish.
13Micro-cook on 100% power (high) for 6 ?8 ?minutes or till tender.
14Set aside.
15In a 1 qt casserole cook turkey, celery, and onion, covered, on high for 2-3 minutes or till turkey is no longer pink, stirring twice.
16Drain.
17Stir in curry powder, salt, and cinnamon.
18Cook 30 seconds more.
19Stir in applesauce and bread cubes.
20Spoon into squash halves.
21Cook, uncovered, on high for 3-4 minutes or till heated through.
