Penuche (brown sugar fudge)

Ingredients:
3 cupPacked brown sugar
3/4 cupMilk
1 tbspButter
1 1/2 tspVanilla extract
1 cupUnsalted peanuts
Procedures:
1Recipe by: jo anne merrill preparation time: 0:30 Combine brown sugar, milk and butter in a medium saucepan.
2Stir constantly over medium heat until mixture reaches 235 (soft ball stage) on a candy thermometer.
3Remove from heat and let cool to room temperature.
4Fit steel blade in work bowl of food processor and process until mixture is light brown, about 20 seconds.
5Add vanilla and peanuts, then mix with 3-4 quick on/off motions.
6Pour into buttered 8-inch square baking dish.
7Let cool completely, then cut into 1 x 2-inch pieces.
8Yield: about 32 pieces of fudge.
