Marshmallows

Ingredients:
1 Envelopoe gelatin
1/3 cupCold water
1/2 cupSugar
2/3 cupLight corn syrup
1/2 tspVanilla
1/4 cupCornstarch
1/4 cupFine granulated sugar
Procedures:
1Put gelatin and cold water in top of double boiler.
2Let gelatin soften.
3Put over boiling water and stir until gelatin is dissolved.
4Add sugar, stir until dissolved.
5Put this mixture in a large mixing bowl with the corn syrup and vanilla.
6Beat with electric mixer about 15 minutes, or until thick and marshmallow like.
7Combine cornstarch and sugar.
8Spread 1/3 of this mixture in the bottom of a 7x10x1 ? pan.
9Pour in marshmallow mixture, smooth with a spatula.
10Let cool at room temperature, about 1 hour.
11Run spatula around edges and turn out onto board spread with 1/3 of cornstarch/sugar mixture.
12Cut into squares, roll in remaining cornstarch/sugar mixture.
13Variation: chocolate marshmallows: do as above but at about 7 minutes of beating time, add 3 tablespoons cocoa and ?tsp salt.
14Continue beating for remaining time.
15Finish as above but add 1-2 tsp cocoa to cornstarch/sugar mixture.
16Thought all you mothers of younger children might get a kick out of making these.
