| 1 | Put gelatin and cold water in top of double boiler. |
| 2 | Let gelatin soften. |
| 3 | Put over boiling water and stir until gelatin is dissolved. |
| 4 | Add sugar, stir until dissolved. |
| 5 | Put this mixture in a large mixing bowl with the corn syrup and vanilla. |
| 6 | Beat with electric mixer about 15 minutes, or until thick and marshmallow like. |
| 7 | Combine cornstarch and sugar. |
| 8 | Spread 1/3 of this mixture in the bottom of a 7x10x1 ? pan. |
| 9 | Pour in marshmallow mixture, smooth with a spatula. |
| 10 | Let cool at room temperature, about 1 hour. |
| 11 | Run spatula around edges and turn out onto board spread with 1/3 of cornstarch/sugar mixture. |
| 12 | Cut into squares, roll in remaining cornstarch/sugar mixture. |
| 13 | Variation: chocolate marshmallows: do as above but at about 7 minutes of beating time, add 3 tablespoons cocoa and ?tsp salt. |
| 14 | Continue beating for remaining time. |
| 15 | Finish as above but add 1-2 tsp cocoa to cornstarch/sugar mixture. |
| 16 | Thought all you mothers of younger children might get a kick out of making these. |
