Ingredients:
3 cupSugar
1 cupLight corn syrup
1 cupWater
4 cupRoasted & chopped hazelnuts
-(Oregon hazelnuts)
3 tbspMargarine
2 tspVanilla
1/4 tspSalt
3 tspSoda
Procedures:
1In a large sauce pan, mix sugar, syrup and water.
2Cook until boiling, stirring constantly.
3Cover pan for one minute.
4Cook rapidly on high heat to soft crack (270) about 5 minutes.
5Add hazelnuts and continue cooking to crack stage (310) or until golden brown.
6Add vanilla, margarine, salt and soda.
7Candy will foam up.
8Pour on buttered cookie sheet and rub spoon on brittle to break bubbles.
9As candy cools, thin out to desired thickness.
