| 1 | In a large sauce pan, mix sugar, syrup and water. |
| 2 | Cook until boiling, stirring constantly. |
| 3 | Cover pan for one minute. |
| 4 | Cook rapidly on high heat to soft crack (270) about 5 minutes. |
| 5 | Add hazelnuts and continue cooking to crack stage (310) or until golden brown. |
| 6 | Add vanilla, margarine, salt and soda. |
| 7 | Candy will foam up. |
| 8 | Pour on buttered cookie sheet and rub spoon on brittle to break bubbles. |
| 9 | As candy cools, thin out to desired thickness. |
