Glace nuts and fruits

Ingredients:
1 cupSugar
1/2 cupWater
1/8 tspCream of tartar
Procedures:
1Combine ingredients.
2Heat to boiling.
3Stir until sugar is dissolved.
4Wipe all grains of sugar from sides of saucepan with a damp cloth.
5Boil without stirring to the hard crack stage (285 - 290°F).
6Carefully remove all grains of sugar from sides of saucepan.
7Remove saucepan from fire.
8Set in pan of cold water to stop boiling instantly.
9Remove from cold water and set in pan of hot water.
10Place each piece of fruit or nuts on a fork.
11Dip into sirup.
12Drain.
13Place at once on waxed paper.
14When sirup becomes too thick, reheat by placing over hot water.
