Ingredients:
2 cupSugar
1 cupWhite syrup
1/4 cupWater
Combine ingredients. Boil
-to brittle stage (300 F)
PART 2
1/2 cupWater
3 Egg whites
2 tbspCocoa
1/2 cupChopped candied cherries
1 cupSugar
1 tspVanilla
1/2 cupCoconut
1/2 cupChopped nuts
Procedures:
1Part 1: combine sugar, cocoa, and water.
2Boil to soft ball stage (234 - 238°F).
3Pour slowly over stiffly beaten egg whites.
4Beat constantly.
5Add part 1, and continue to beat until the mixture begins to stiffen.
6Add flavoring, nuts, candied cherries, and coconut.
7When mixture is firm but still hot, rinse your hands in cold water (do not wipe them).
8Form mixture into a loaf.
9Roll in yellow coconut.
10Place on well-buttered plate.
11Slice with sharp knife
