Ingredients:
1 cupSugar
1/3 cupWhite corn sirup
1/3 cupStrained honey
1/4 cupWater
1/4 tspSalt
2 Egg whites
1 cupChopped nuts
1/4 tspVanilla
1/2 lbsDipping chocolate
Procedures:
1Combine sugar, sirup, honey, and water.
2Stir occasionally.
3Boil to hard ball stage (265 - 270°F).
4Add salt to eggs.
5Beat until stiff.
6Gradually pour on half of the sirup, beating constantly with the egg beater or a spoon.
7Boil remaining sirup to hard crack stage (285 - 290°F).
8Pour gradually onto egg mixture, beating constantly.
9Place over fire on asbestos mat.
10Beat until thick.
11Add flavoring and nuts.
12Pour into well-buttered, shallow pans.
13When cool cut in squares.
14Coat these with melted chocolate.
