Ingredients:
| | 1 ea Med Potato | | 3/4
| cup | Sugar | | | 2 ea Egg white | | | ?ea Lemon, grated rind of | | 1
| x | *pastry | | 2
| tbsp | Butter | | | 2 ea Egg yolk | | | ?ea Lemon, juice of | | 1/2
| cup | Milk |

Procedures:
| 1 | Boil the potato and mash fine. | | 2 | Add the butter and sugar and stir to a creamy consistency. | | 3 | Let this mixture cool and then add the beaten egg yolks, the milk, lemon juice and rind. | | 4 | Mix together well and then fold in the stiffly beaten egg whites. | | 5 | Pour into a pie pan lined with crust and bake at 400°F about 25 minutes |
