| 1 | Drain watermelon honey until all the tiny particles of melon are comparatively free from sirup. |
| 2 | Prepare a heavy sirup made of 2 parts sugar and 1 part water. |
| 3 | Tint a delicate green with food coloring. |
| 4 | Flavor with mint. |
| 5 | Add the drained particles. |
| 6 | Simmer until nicely colored. |
| 7 | Drain. |
| 8 | Roll in granulated sugar. |
| 9 | Dry in very slow oven (300°F). |
| 10 | A portion of the sirup may be colored pink and flavored with rose or raspberry before the melon is added. |
| 11 | If the natural color is desired, roll the drained particles in sugar, and dry. |
| 12 | Any variety of flavors and colors may be obtained. |
