Procedures:
1Drain watermelon honey until all the tiny particles of melon are comparatively free from sirup.
2Prepare a heavy sirup made of 2 parts sugar and 1 part water.
3Tint a delicate green with food coloring.
4Flavor with mint.
5Add the drained particles.
6Simmer until nicely colored.
7Drain.
8Roll in granulated sugar.
9Dry in very slow oven (300°F).
10A portion of the sirup may be colored pink and flavored with rose or raspberry before the melon is added.
11If the natural color is desired, roll the drained particles in sugar, and dry.
12Any variety of flavors and colors may be obtained.
