Ingredients:
8 ozBacon (about 10 slices)
24 ozFrozen Hash Browns
1 cupChopped Onions
3/4 cupChicken Broth
1/2 cupCider Vinegar (Optional)
1 largeEgg
1 tbspGranulated Sugar
1 tspCelery Seed
1 tspSalt
2 tbspChopped Pimiento (opt)
Procedures:
1Cook bacon in lg.
2Skillet over med.-high heat until crisp; remove to paper towels to drain.
3Add potatoes and onions to bacon drippings in pan.
4Cook over med. heat, stirring often, 6-8 minutes, or til both are tender.
5Beat remaining ingredients, except pimiento, in a sm.
6Bowl.
7Pour over potato mixture; reduce heat to low and cook, stirring constantly, until dressing thickens slightly, about 4 minutes.
8Crumble bacon over top; sprinkle with pimiento, then stir to mix into salad.
9Serve immediately.
