Ingredients:
3 cupCooked, steamed rice
1/3 cupVinegar
1/3 cupOil
1/2 tspThyme
1/4 tspTabasco sauce
1/2 tspSalt
1/2 tspBlack pepper
1 can(8-?oz.) petit pois
-Peas (drained)
1 Jars (8 oz.) quartered marin
-Hearts of artichoke and
-Marinade (from jar)
1/3 cupScallions (chopped)
6 Fresh cherry tomatoes
-(washed and sliced in half
1 medHead romaine lettuce
Procedures:
1Serve with cheese croquettes.
2Steam rice and set aside.
3In a bowl, mix vinegar, oil, thyme, tabasco, salt and pepper.
4Add peas, hearts of artichoke, artichoke marinade form jar, scallions and tomatoes.
5Toss gently and place in refrigerator.
6Just before serving, add cooled rice to mixture and stir thoroughly.
7Arrange lettuce leaves on serving platter or on individual dishes and place mixture on top.
8Use ?to 1 cup mixture per serving
