Tourtiere - pork pie

Ingredients:
3 cupMashed potatoes
3 lbsLean pork, ground
1 cupWater
1/4 tspNutmeg
1/4 tspAllspice
1 tbspSalt
1/4 tspPepper
1/2 cupOnion, chopped
Pastry for 2 (2 crust) pies
Procedures:
1In a saucepan, combine the ground pork, water, nutmeg, allspice, salt, pepper and onion.
2Cook over moderate heat for 30 minutes, stirring often to prevent sticking.
3Remove from heat; add the mashed potatoes; and mix well.
4Cool.
5Fill two pastry-lined plates;adjust top crusts, slashing pastry to allow for the steam to escape as the pies bake.
6Bake in a hot oven, 425 °F., for 40 minutes.
7Serve hot or cold.
