Ingredients:
6 1/2 ozCanned tuna in water
1 medOnion -- chopped
1 Clove Garlic -- minced
1 canTomatoes -- blended
16 Olives -- sliced
1/4 cupGreen chiles -- diced
1 tspSugar
4 tbspVegetable oil
1/2 tspSalt
6 ozMonterey jack cheese --
Shredded
1 cupCottage cheese
1 Egg
4 Corn tortillas
1 tspCumin
Procedures:
1Drain tuna.
2Sautae onion and garlic until soft in oil.
3Stir in tomatoes, olives, chiles, cumin, sugar and salt.
4Simmer covered 15 minutes.
5Remove and stir in tuna.
6Spoon ?tuna mixture into casserole.
7Top with ?cheese.
8Combine cottage cheese and egg.
9Dollop over shredded cheese.
10Place tortillas over cottage cheese mixture and mound remaining tuna mixture over all.
11Sprinkle with remaining monterey jack cheese.
12Bake at 350 °F for 30 minutes.
13Cool 10 minutes before serving
