Ingredients:
1 cupOnion, chpd
1 tbspOil
1 tspChili powder, up to 2t
1 tspCumin
1/2 tspGarlic powder
1/4 tspSalt
15 ozCn red kidney beans, drained
1 1/2 cupCooked brown rice
1 cupCheddar cheese, shredded
3/4 cupMilk
2 xEggs, beaten
Procedures:
1In saucepan, cook onion in oil.
2Stir in chili powder, cumin, garlic, and salt.
3Cook 1 min. cool.
4Stir in beans, rice, cheese, milk, and eggs.
5Spray a 10" microwave-safe pie plate with nonstick spray.
6Add rice mixture.
7Cook, uncovered, 50% power, 22-24 mins or until center is just set, giving dish a quarter turn, twice.
8Let stand 10 mins.
9Garnish with chopped green pepper and serve with salso if desired.
