Ingredients:
1/4 cupButter or margarine
1/2 cupOnion, chopped
3 tbspFlour
1 tspSalt
1/4 tspTabasco pepper sauce
2 cupMilk
1 tspLemon juice
1/8 tspNutmeg
1 packSpinach, chopped, frozen(10oz)
4 Potatoes, Idaho, baked/chilled
1/2 lbsHam, cooked, chopped(1.5c)
Procedures:
1Melt butter in a medium-size saucepan; add onion and cook until tender.?Blend in flour, ?teaspoon salt and tabasco sauce.?Stir in milk, stirring constantly, until mixture thickens and comes to a boil.?Remove from heat; stir in lemon juice, nutmeg and spinach.?Peel cooked potatoes; cut into 1/8-inch slices.?Place a layer of potatoes in a greased 2-quart casserole; sprinkle with ?teaspoon salt.?Sprinkle with half the ham and half the spinahc sauce.?Repeat with remaining potatoes, remaining ?teaspoon salt, ham and sauce.?Cover and bake in preheated 375°F.
2Oven 45 minutes, or until heated through.?note: to bake potatoes: scrub, dry and prick with a fork.
3Bake in preheated 425°F.
4Oven 55 to 65 minutes, or until soft.
5Chill before slicing.?/td>
