| 1 | Simmer it til tender in ?c boiling water. |
| 2 | Drain well. |
| 3 | Sprinkle w/ 2tbsp chopped parsley(optional). |
| 4 | Cho til very fine: 1 small onion. |
| 5 | Melt 1tbsp butter. |
| 6 | Saute onion in this til golden. |
| 7 | Add it to eggplant with: ½c milk and 2 well beaten eggs(eggs optional). |
| 8 | Melt 3tbsp butter. |
| 9 | Stir into it, til the butter is absorbed: ?cracker crumbs or ½c bread crumbs. |
| 10 | Preheat oven to 375? |
| 11 | Place layers of eggplant and layers of crumbs in a baking dish. |
| 12 | Season them, if crackers ar unsalted, with ¼tsp salt & ¼tsp paprika. |
| 13 | Wind up w/ a top layer of crumbs. |
| 14 | Place on it: thin slices of cheese or grated cheese(opt). |
| 15 | Bake the eggplant for ?hour. |
| 16 | Garnish w/ crisp crumbled bacon or thin strips of pepperoni. |
