Ingredients:
Scalloped eggplant
Procedures:
1Simmer it til tender in ?c boiling water.
2Drain well.
3Sprinkle w/ 2tbsp chopped parsley(optional).
4Cho til very fine: 1 small onion.
5Melt 1tbsp butter.
6Saute onion in this til golden.
7Add it to eggplant with: ½c milk and 2 well beaten eggs(eggs optional).
8Melt 3tbsp butter.
9Stir into it, til the butter is absorbed: ?cracker crumbs or ½c bread crumbs.
10Preheat oven to 375?
11Place layers of eggplant and layers of crumbs in a baking dish.
12Season them, if crackers ar unsalted, with ¼tsp salt & ¼tsp paprika.
13Wind up w/ a top layer of crumbs.
14Place on it: thin slices of cheese or grated cheese(opt).
15Bake the eggplant for ?hour.
16Garnish w/ crisp crumbled bacon or thin strips of pepperoni.
