Ingredients:
2 cupGreat northern beans
1 largeYellow onion, chopped
1 largeGreen pepper, chopped
1/2 cupWater
1 1/2 tspCurry powder
2 tbspLemon juice
1 dashBlack peppercorns, ground to
2 quartWater
2 Celery stalks, chopped
2 Garlic cloves, crushed
1 1/2 cupWater
2 tbspParsley, flakes
1 tbspSoy sauce, low sodium
Procedures:
1Preparation time: 3:15 cook the beans in the 2 quarts water until tender, about 2 hours.
2Drain, reserving the liquid.
3Preheat the oven to 350 degrees.
4Saute the onion, celery, green pepper, and garlic in the ?cup water for 10 minutes.
5Remove from heat and add the cooked beans, 1 ?cups bean-cooking liquid, and seasonings.
6Pour into a casserole dish and bake for 1 hour.
