| 1 | In a large skillet, brown pork chops in oil and season with salt and pepper. |
| 2 | Remove to a warm platter. |
| 3 | Mix ?cup pan drippings with bread crumbs. |
| 4 | Reserve ?cup; sprinkle remaining crumbs into a 13" x 9" x 2" baking dish. |
| 5 | Combine rhubarb, sugar, flour and cinnamon; spoon half over the bread crumbs. |
| 6 | Arrange pork chops on top. |
| 7 | Spoon remaining rhubarb mixture over chops. |
| 8 | Cover with foil and bake at 350 °F for 30-45 minutes. |
| 9 | Remove foil. |
| 10 | Sprinkle with reserved bread crumbs. |
| 11 | Bake 10-15 minutes longer or until chops test done. |
| 12 | Yield: 4 servings. |
