Rhubarb pork chop casserole

Ingredients:
4 Pork loin chops, ?inch
-thick
1 tbspCooking oil
Salt and pepper to taste
3 cupSoft bread crumbs
3 cupSliced fresh or frozen
-rhubarb, 1 inch pieces
1/2 cupPacked brown sugar
1/4 cupAll-purpose flour
1 tspGround cinnamon
Procedures:
1In a large skillet, brown pork chops in oil and season with salt and pepper.
2Remove to a warm platter.
3Mix ?cup pan drippings with bread crumbs.
4Reserve ?cup; sprinkle remaining crumbs into a 13" x 9" x 2" baking dish.
5Combine rhubarb, sugar, flour and cinnamon; spoon half over the bread crumbs.
6Arrange pork chops on top.
7Spoon remaining rhubarb mixture over chops.
8Cover with foil and bake at 350 °F for 30-45 minutes.
9Remove foil.
10Sprinkle with reserved bread crumbs.
11Bake 10-15 minutes longer or until chops test done.
12Yield: 4 servings.
